Any HEALTHIER Vanilla Fudge Recipes?

I'm a diabetic who has a guilty love of vanilla fudge!

I'm looking for a recipe for vanilla fudge using healthier, alternative ingredients. Lower in carbs and sugar is ideal. Can you use Splenda in fudge?

I don't like chocolate, so no chocolate fudge recipes please.

The more the merrier. Thanks!

Update:

I don't have a candy thermometer.

Any recipes that you simply mix together and allow to harden in the fridge or on the counter?

A "candy thermometer" costs about $4.00, you will have it to make all the fudge you want.
