如何自己製作臭豆腐

我想製作臭豆腐

但賣臭豆腐的人也不知道

因為他們是去批發來的

如果能製作符合自己口味的臭豆腐那該多好

    先將1.5-2斤的芥菜或韭菜洗淨晾乾(切小段).加入冷開水(菜平鋪的3倍冷開水).裝入大甕或玻璃灌蓋緊.不要裝全滿7-8分滿即可.封14天靜待發酵(都不可以去開喔)

    開封製作時會很臭喔?要通風.最好戴口罩.並在屋外

    然後濾渣(丟棄).留下需要量的滷水.其他位用滷汁可以放進冰箱(但要密封蓋好~因為很臭)滷水看你的豆腐量(蓋過豆腐再多一些即可)豆腐浸泡之前先洗淨晾乾.可以用牙籤稍扎數孔.浸泡6H.(用過的滷水就倒掉)然後臭豆腐用冷開水稍過水.瀝乾就可以熱鍋炸豆腐了.先中火炸熟裡面.再大火炸酥表皮(別忘了做泡菜ㄛ)
