Simply assume that the 2 metal are A and B, the thermo expansion of A>B. The temperature are measured by the lenght different between A and B. As temperature increase, The lenght different (A-B) increase. If they are interchange, there it will become B-A, as temperature increase, B-A decrease (increase in absolute value, but minus sign is need to take in calculate), so as the therometer display, the "temperature" decreased.
