Adobo Dry Seasoning (Adobo Seco)
3-6 tablespoons salt
3 tablespoons onion powder
3 tablespoons garlic powder
3 tablespoons ground black pepper
1 1/2 teaspoons ground oregano
* 1 teaspoon ground cumin
* 1 teaspoon dried citrus zest (orange, lemon, or lime)
* 1 teaspoon saffron
* 1 teaspoon achiote powder
Place all ingredients in a jar with a tight fitting lid. You can use any or all of the optional ingredients.
Shake well and store for up to 2 months in a cool dry place.
Makes about 1 cup; enough for 6 to 8 pounds of meat, poultry, or seafood
(It calls for whole spices (peppercorns and cumin seeds) that are freshly toasted before grinding. For a quicker version, skip the roasting and grinding. Use pre-ground pepper and cumin-the mixture will still be quite tasty.)
2 tablespoons peppercorns, black
2 tablespoons cumin seeds
2 tablespoons oregano, dried
1/2 cup salt, coarse (kosher or sea) salt
2 tablespoons garlic powder
Mix all ingredients together; store in covered container.
