OK this is almost an insult. I was born and raised here in southeast Louisiana. No one has ever made a gumbo with beef. It just is not done. And do not add tomatoes!! My grandmother would throw a fit! Make a roux, get it dark, add diced onions and cook for 3 minutes watching not to burn. Add chicken or shrimp and smoked sausage pieces. smother that down adding bits of water. I add chicken broth and water, let it all dissolve and simmer til it is cooked. You can add Tony Chacerie's seasonings, or Tobasco. Some people like to add oysters, and crab meat also to the shrimp one. NO BEEF!!!!! And not too thick of a sauce, must be soupy. Don't burn your roux!!!!

    Beef gumbo? Ok

1st. buy a really good gumbo from a fine restaurant, take all the seafood and sausage, chicken out, then simply add your stupid beef. enjoy. serve with crackers.

Gumbo should not be made with beef...it should be made with chicken, seafood or andouille sausage.

Try Food Network's site...Emeril has a great chicken/andouille gumbo recipe up there.

putting beef in a gumbo is BLASPHEMY!! It should be chicken, seafood, and andouille sausage.

Save your beef for a nice spicy chili
