Check your local health food, Whole Foods, or Trader Joes for the vegan meats, margerine, egg replacers, bread and rolls. They will also have a good selection of vegan sweets.
Oven fried artichoke hearts (like fried cauli or mushrooms only healthier)
Serve with Aoili (made with veganaisse. lemon and crushed garlic)
Large oven baked potato wedges topped with "Fantastic Foods" taco filling and shredded rice cheese and green onions.
A good vegan chili and jalapeno corn muffins or sticks
Sloppy Joes (Fantastic foods is a wonderful vegan sub and has a kicked up recipe on the pkg. called "Mama's Sloppy Joes"). Serve with good chips, crusty rolls and dill pickles. Manwich sauce and Boca crumbles are both vegan, but the Manwich needs a little love; more tomatoes, a little brown sugar, and some chili powder.
Homemade vegan nacho sauce and chips
Subs made with field roast smokey tomato slices, muffelata olive salad and artisan rolls
Stuffed mushrooms (lentil walnut or vegan italian sausage filling)
Puff pastry filled with good vegan hot dogs or sausages (I recommend Cedar Lake veggie dogs or any Field Roast sausages)..and a mustard dipping sauce
Satay/skewers with Asian peanut sauce - chicken or beef made with Morningstar Farms Meal Starters.
Phyllo dough egg rolls, baked - can be filled with anything like veggie egg roll filling, Samosa, Spanakopita with any appropriate sauces
Nate's meatballs in a marinara sauce with thick slices of homemade garlic bread or filled into small hoagie rolls.
Steak sandwiches - Grilled morningstar farms "steak" meal starters, good rolls, and a horseradish mustard mixed with veganaisse, slice tomatoes and arugula.
Falafal, soft pitas, cucumber slices, tomatoes and lemon-tahini sauce
Pizza - If you have any Little Cesars where you live, their crust and sauce are both vegan. They will top them with a ton of veggies and then add some more interesting ones of your own
If you decide to go with the Fantastic Foods items, they should be made the night before. I just think they taste better the next day.
