We used wooden skewers soaked in warm water for my uncle's luau. We just packed enough fruit chunks onto them so the skewers only showed a tiny bit at one end (for ease of lifting).

We then packed the loaded skewers in a mixture of lemon and lime juice! That kept the browning down to a minimum.

Try fruit skewers grilled for a moment over a hot fire!

I have never heard of an edible skewer. Just buy the wooden ones.

You can soak the fruit kabobs in pineapple juice.

You can try using Rosemary stems, which will impart a savory and interesting flavor to your fruit, but should turn out ok. I'm a fan of using regular wooden skewers, though, that have been soaked in pineapple juice and sprinkled with sanding sugar.

i would use the wooden ones...everything else would get soggy soaking...i make a fruit salsa...AMAZING....and i use just a tad bit of orange juice so the fruit stays...and also lime juice works well..as does the pineapple...i can see that you are trying to keep it fruit...why not try the fruit salsa...it is amazing..and low cal..you can eat it as is...or put it on top of chicken or fish..any protien actually....or just dip it w/ tostitos...if you want the recipe let me know...you will not regret it..and it will be the hit of the party...it always is for me...and they always ask me to bring it for a dish to pass....
