Honey bees gather pollen from almost all plants. It is just that plants flower at different times during the season. Which is good for the bee. That way it has pollen available over the whole spring and summer.

Honey bees will visit any flower they can get nectar from. Single flower honeys are produced by managing the hive, taking it to particular fields and harvesting the honey just before and just after a particualr flower's season.

Place a hive in the middle of an orange grove and you'll get orange blossom honey. Place it in a tupulo grove when the tree is in blossom and you'll get tupolo honey.
