1. Introduction

Agro-industrial plant byproducts have been widely investigated for their antioxidant potential (Moure et al., 2001; Schieber et al., 2001).

The recycling of plant wastes has focused on their uses as radical scavengers in dietary supplements, or anti-ageing ingredients in cosmetics, as well as natural preservatives in food and“health” products.

The common starting materials for these products have been olive and vegetable wastes,fruit pomaces and peels, but increasingly seeds have gained popularity in this area. The exploitation of grape seeds for radical scavenging extracts (e.g. Murga et al., 2000; Bagchi et al., 2003; Louli et al., 2004) has been followed by investigations on other seed residuals from the fruit processing industries (e.g. Singh et al., 2002; Soong and Barlow, 2004). The seeds of oil crops, particularly those containing high percentage of polyunsaturated fatty acids (PUFA) are thought to be predominantly rich in antioxidants.

This includes not only lipophilic antioxidants in the oil, but also polar antioxidants in other seed compartments, which major part consist of phenolic structures (Shahidi, 2000).

The extraction of the phenolic antioxidants from defatted seed residues avoids the expensive process of drying the material, which is an economical disadvantage in other byproducts (Peschel et al., 2006).

Highly active extracts and single compounds have already been obtained from various oil seed meals (e.g. Shahidi, 2000; Matthaeus,2002); but the majority of research has focused on sesame seed cake (e.g. Ohtsuki et al., 2003; Suja et al.,2004)
