Anyone know any amazing/simple seafood recipes?
we like salmon, shrimp, tuna...nothing exotic please!

this is easy an good....
1 pound imitation crab meat[ or reg crab]
1 pound med shrimp
1 pound sea scallions
1 pound angel hair pasta.. cooked
1 pound fresh mushrooms sliced
1 pkg green onions chopped
1 med bell pepper chopped
1 24 oz tub sour cream
1 c parmasion cheese
1 T parsley flakes
salt an pepper to taste
your favorite cheese to sprinkle on top
mix all in well oiled 3 qt bakin dish bake in 350 oven fer 35-45 min add cheese to tp bake 5 min more or til cheese melts.... serve with fresh fruit salad an hot fudge brownie cake....... yummy.

For 4 people:
4-5 carrots, 2 green courgettes (zucchini), 4 salmon fillets or steaks, tomato paste, olive oil, lemon juice, s&p.
Peel the carrots. Slice the veggies, the carrots very thin and about half as thick as the courgettes. Fry the salmon in a bit of olive oil until the outside is done. Take the salmon out and sprinkle with a bit of lemon juice and a little pepper. Place the veggies in the pan, stir fry for a few minutes. Then add water (approx 1 cup) and 1-2 teaspoons of tomato paste. Place the salmon on top and cover with a lid. Cook everything on low heat until carrots are "al dente".

I am a seafood hater, but love a tuna steak. Don't have a recipe for one but know a good one has some lemon juice and lemon pepper and garlic!

I've found that an apricot glaze works extraordinarily well with almost any seafood, and its very simple.
1 cup apricot preserves
2 tbsp white vinegar
1 tbsp dried tarragon
Mix all the ingredients together, add more vinegar to thin the glaze if necessary. Spoon the mixture over the seafood as its cooking in the oven or on a grill.

My shrimp and scallop dish.
Cut red, green, yellow peppers into strips.
Cut sweet onion into chunks.
Toss it all with olive oil and black pepper and minced garlic
Use a BBQ grill basked (you can get them anywhere now) and cook then on low on the grill.
Meanwhile, sautee Shrimp in a pan - to not quite done.
Sautee Scallops in seperate black frying pan until not quite done (then stick entire pan in the oven to finish it)
Take almost cooked shrimp and dump them in the basket with the peppers & onions. Finish grilling until done.
Dump everything in a big bowl. Take scallops out of oven and add to the rest (scallops dont do very well in the basket, that's why I use a black frying pan and finish them in the oven)
The nice thing about this dish is it's light and healthy. You can spice it up, too.

this recipe is great for the grill and it's very healthy-
1. wrap thinly-sliced prosciutto ham around large shimp (peeled and devenied, obviously).
2. slice up an apple.
3. alternate threading the shrimp and apple slices onto bamboo skewers.
4. grill on each side for 2-3 minutes or until the shrimp is no longer opaque.
Serve this with a nice arugula/parmesean salad and some brown rice and you are good to go.

1-1 1/2lbs shrimp- peeled, devained
1-2 cloves of garlic
crushed chili flakes- to taste
11/2 Tbs butter
2 t garlic powder
garlic salt to taste
1. put butter in skillet, melt , add garlic and chili flakes-1 min
2. add shrimp, garlic powder, garlic salt
3. cook until shrimp is tender
4. serve over rice or pasta with a squeeze of lemon juice on top
sounds like a lot of garlic but it is really not it doesn't taste overly garlicky, Just right

PARMESAN COATED SALMON
1 lb. salmon filet
grated Parmesan cheese
Remove skin from salmon filet. With a sharp knife, remove grey colored fat from skin side of filet. Cut into 3 or 4 pieces, place on sheet of tin foil or paper. Salt and pepper the filets. Sprinkle with dill weed on both sides. Dust with paprika. Coat thoroughly with Parmesan cheese and pat cheese to make it adhere well.
Place about 1/8 inch of olive or granola oil in large frying pan over medium heat. When oil is hot, add filets. Brown on both sides. Let filets cook until brown (about three minutes) and turn. Don't move filets around in pan until brown on one side before turning. This helps the cheese adhere.
Do not over-cook or salmon will get dry and hard.
Serves two or three people.
1 lb. cooked shrimp
1 can condensed mushroom soup
1/4 c. seedless raisins
1 lg. onion, finely chopped
2 tbsp. butter
1/4 each tsp. salt and pepper
2 tsp. curry powder
1/4 c. sour cream
dash of tabasco
lemon juice, to season
Sauté the finely chopped onion and 2 tbsp. butter. When onion has browned, add condensed mushroom soup and curry powder (mixed to paste).
Add shrimp, seedless raisins, and heat thoroughly. Season with salt and pepper.
Stir in sour cream, a few drops of lemon juice, and a dash of tabasco.
Serve over hot rice.
I omit the raisn and use cashews (thats just my preference)

You go to Trader Joe's and look in the frozen section. There is a box called 'Seafood Crab Cakes' that you pop into the oven for 10 minutes, and voila. Instant yummers. They are small -- for appetizers.
