(b) Some vegetable sellers in the markets spray water over the vegetables when they are selling

1.(a) It is because biological washing powder contains protesase (an enzyme) that can digest proteins. So it can help to remove the stains on clothes.

b.) I am not sure the answer. But may be

Vegetables contains a lot of water, but if they expose in air for a long time, they become dry and appear dull in colour. In order to make them look fresh, the seller spray water over the vegetables.
