    Fried potatoes and onions, sliced tomato, sliced onion and add a little pickle relish on top of beans and cornbread ...you have a meal.

    I sometimes take polska kielbasa and slice it up, put it in a sauce pan with barbecue sauce and let it simmer for about 5 minutes

    Potato Cakes

    2 Cups Creamy Mashed Potatoes

    1/2 Cup soft Bread Crumbs

    1 Tbsp. Finely Chopped Fresh Dill

    1 Tsp. Finely Chopped Fresh Thyme

    2 Eggs, Beaten

    Salt

    Freshly Ground Pepper

    2-3 Tbsp. Butter

    Mix the creamy mashed potatoes with the bread crumbs, the fresh herbs, and the beaten eggs, add a little salt and pepper to taste. Heat the butter in a large skillet. When the butter gives off a slight haze, drop in large spoonfuls of the potato mixture and flatten them with a spatula. Cook over a gentle heat until the undersides of the cakes are light brown, then turn over with a spatula and brown the other side.

    *******ROASTED POTATOES

    potatoes of choice peeled and cut in quarters

    1 tbsp. light vegetable oil

    6 lg. garlic cloves, peeled and lightly crushed

    1 cup chopped or sliced onions

    Salt and fresh ground pepper to taste

    Place potatoes in salted water to cover and bring to boil for 2 minutes. Drain thoroughly and cool. Preheat oven to 400 degrees.

    Spread film of oil over the bottom of a heavy baking pan in which potatoes fit into a single layer. Add crushed garlic cloves and onions.

    Roast in preheated oven for about 45 minutes or until potatoes are golden brown and tender. Remove garlic cloves if they begin to turn dark brown. Shake pan or turn potatoes several times during roasting. Add a little more fat or oil if pan seems dry.

    Sprinkle potatoes with salt and pepper and stir to distribute seasonings evenly. Serves 4.

    mash potatoes,and gravy,or rice and gravy,when i fix pinto beans,i usually make those as a side dish,also mac & cheese is good also.any kind of greens will work.

    Cabbage cut into small strips and steamed.

    Greens cooked and add a little hot sauce / tsp vinegar.

    Ice Tea.

    It is determined by the fruit or veggie associated with a comparison. In the event you compare a n to a carrot, the carrot is the better of the two nutritional. But since you compare an avocado to the carrot, then this avocado is better. The two the apple and avocado, are fruits.
