Does anyone know healthy (yet satisfying) dessert recipes?

I really love fruit, and I do so much to it to make it taste like a different dessert. I make grilled fruit kabobs, fruit and yogurt parfaits, fruit salads, Jello with fruit in it...but now I want something really different! I'm open to any suggestions, but I really want to have something sweet and low-fat and low-calorie (and low-sugar if possible). I know it sounds like I'm putting up some pretty strict guidelines, but I'm very open!

    Mmmmmm, yes! I love light deserts, they are so good! Here are some of my favorites.

    Strawberry Citrus Sorbet

    Its far from sugar free, but with only 74 calories per serving and zero grams of fat, its worth it. This desert is great for hot summer nights.

    Serves 4

    2/3 cup sugar

    3/4 cup sliced strawberries

    1/2 cup orange juice

    1/2 teaspoon grated orange peel

    1. Combine the sugar in a saucepan with 1 cup of water and bring to a boil over medium heat, stirring until all sugar is dissolved and a simple syrup forms. Chill for 1 hour.

    2. In a blender, puree the strawberries, orange juice, and orange peel until smooth. Gradually add the chilled syrup and blend well.

    3. Pour the mixture into a glass dish and cover. Freeze for about 3 hours, stirring every 30 minutes. Blend again until smooth.

    4. Serve immediately or cover and freeze for up to 3 days.

    No Ice Cream Maker?

    Here's the low-tech way to churn out great sorbet. Place the fruit mixtures in a stainless steel or glass dish and put them in the freezer. When the mixture begins to harden -- about 30 minutes -- take it out and stir it till it's silky. Repeat several times, and voilá! Delicious hand-made sorbet.

    Moist, rich, fluffy, and delicious cupcakes. With only 15 calories from fat per serving? Yup. These are my favorite light desert recipe that will have you asking for more.

    1 Duncan Hines Yellow Cake Mix

    1 1/4 cup of water

    1/2 cup of applesauce

    4 egg whites

    1 pinch cinnamon

    Pour out the cake mix. DO NOT FOLLOW THE DIRECTIONS ON THE BOX! Pour in the water and applesauce. Blend with the mix. In a separate bowl, beat egg whites until stiff peaks form. Stir in with the rest of the ingredients, along with cinnamon. Bake at 350 degrees for 17 minutes. Enjoy!

    Calories: 90 per cupcake

    Angel Food

    Servings: 16

    Serve this with fat free frozen yogurt and fresh strawberries. Yum!


    1 1/4 cups cake flour

    1 3/4 cups white sugar

    1/4 teaspoon salt

    1 1/2 cups egg whites

    1 teaspoon cream of tartar

    1/2 teaspoon vanilla extract

    1/2 teaspoon almond extract


    Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.

    Sift together flour, sugar, and salt. Repeat five times.

    Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.

    Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.

    Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.

    I run a daycare and my daycare kid's all time favorite snack is vanana (vanilla banana) yogurt with pureed raspberries on top. They have a lot of fun swirling the red into the white, it tastes amazing and it's healthy too!

    You could also try making a fruit crisp...

    2 cups 1-minute oats

    1 cup flour

    3/4 cup brown sugar ( you could use less)

    1/2 cup melted butter

    Any type of fruit, 3 cups sliced or chopped (I think peach is the best)

    Put the fruit in the bottom of a pan, (8X8 or 13X9 or something like it). Mix everything except the fruit together, and pour it on top of the fruit. Bake at 350 for like 15-20 until the fruit is bubbling. Serve with frozen yogurt or low sugar ice cream! MMmm.

    Grilled Mixed Fruit Recipe courtesy Giada De Laurentiis


    1 pint strawberries, hulled and halved

    4 bananas, halved lengthwise

    1 cup fresh blueberries

    1/4 cup sugar

    1/4 cup chopped fresh mint leaves

    1 lemon, juiced

    3 tablespoons simple syrup, recipe follows

    Place a grill pan over medium-high heat.

    In a medium bowl, toss the fruit in the sugar to coat. Grill over medium heat, until a golden crust begins to form on the fruit, about 3 to 4 minutes per side.

    In another medium bowl, mix together the mint, lemon juice, and simple syrup. Arrange the fruit on a serving platter, drizzle the mint syrup over top, and serve.

    Simple syrup:

    1/4 cup water

    1/2 cup sugar

    In a saucepan, combine water and sugar over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, or until the sugar has dissolved. Take pan off heat and cool the syrup before using. Any extra cooled syrup can be refrigerated in an airtight container for up to 2 weeks.

    Yield: 1/2 cup

    2 almond biscotti

    1 cup vanilla yogurt

    1/2 cup frozen raspberries, unthawed (or any type of frozen fruit)

    4 teaspoons orange blossom honey

    4 tablespoons sliced almonds, toasted

    Coarsely crumble the biscotti into 2 small bowls. Puree the yogurt and frozen raspberries in a blender until smooth and thick. Spoon the yogurt mixture over the biscotti. Drizzle each bowl with the honey and sprinkle the almonds on top. Serve with a cup of Americano coffee, if desired.

    fruit pizza with mangos and peaches and star fruit

    1 star fruit, sliced

    1 peach, sliced

    1 mango, sliced

    1/2 cup white Zinfandel

    4 ounces cream cheese frosting

    10-inch pizza shell

    1/4 cup brown sugar

    Preheat oven to 400 degrees F.

    Put the sliced fruit into a bowl and cover with wine; let it sit for 30 minutes. Smear the cream cheese frosting onto the pizza shell to desired thickness. Place the fruit on top of the frosting, and sprinkle with brown sugar. The pizza is then baked according to pizza shell directions or until frosting is melted and crust is crisp.

    One of my favorite fruit-based desserts is grilled pineapple. Slice a fresh pineapple into rings, or buy one of the canned, pre-sliced variety. Empty a can of coconut milk into a bowl and add the sweetener of your choice, if desired. The amount and type is totally up to you, and honestly isn't even necessary.

    Stir well, then dip the pineapple slices in it and throw them on the grill. The cook time will depend on the temperature you've set your grill at, and how 'done' you want them to be. I usually flip them once I can see the grill marks turning golden. The longer you leave them on, the softer they'll be.

    Brush a little bit of the coconut milk mixture on them while they're cooking, and before you flip- it'll help keep them from sticking.

    you could try a apple pie and use 3 kinds of apples I use 3 sweet apples 3 tart ones and 2 that are juice, you have to put Cinnamon and apple pie spice and dot with butter it is great.

    Pineapple Buttermilk Sherbet


    2 cups 1% buttermilk

    1 (20 ounce) can unsweetened crushed pineapple, undrained

    3/4 cup sugar


    In a bowl, combine all ingredients; stir until sugar is dissolved. Pour into a 9-in. square dish. Cover and freeze for 1 to 1-1/2 hours or until mixture begins to harden.

    Stir; freeze 3-4 hours longer or until firm, stirring occasionally. Remove from the freezer 20-25 minutes before serving.

    Nutritional Analysis: One serving (1/2 cup) equals 113 calories

    Have you tried dipping your fruit in chocolate? Put it in the fridge to harden. You can dip just about any fruit. You can also dip pretzels.
