Any nice tasty salad ideas?

Hello people! Does anyone have any ideas on lovely summery salads? I went to someones house for lunch and they made me a feta cheese, asparagus and orange salad and it was lovely! I was wanting to make more winning combinations and wondered if anyone else had any top salad tips??

    Sprinkle your salad with walnuts, raisins, dried cranberries and sesame seeds and a drizzle of oil.

    Fresh Spring Vegetable Rice Salad. Enjoy!

    INGREDIENTS

    2 cups cooked basmati rice

    2 cups cooked or canned garbanzo beans (chickpeas), drained and rinsed

    2 red, yellow, or green bell peppers, diced

    2 cups 1-inch asparagus pieces, blanched

    1 cup chopped celery

    1 cup thinly-sliced radish

    4 tablespoons freshly ground flaxseeds

    1/2 cup green onions, white and green parts, chopped

    4 tablespoons chopped fresh parsley

    4 tablespoons toasted sesame oil

    Juice of 2 lemons

    1/2 teaspoon cumin

    1/2 teaspoon turmeric

    1/2 teaspoon salt

    8 cups chopped fresh spinach

    2 teaspoons sesame seeds, for garnish

    1. In a large bowl, combine the rice, garbanzos, pepper, asparagus, celery, radish, flaxseeds, green onions, and parsley.

    2. In a small bowl, whisk together the sesame oil and lemon juice, then add the cumin, turmeric, and salt. Pour the dressing over the salad and mix well. Serve over a bed of spinach and sprinkle with sesame seeds.

    Serves 4.

    i have 2 nice salads that are not your usual bbq fare.

    1)Asparagus and Pinenut and 2)Mushroom and Coriander

    1)Wash and snap off asparagus. Discard woody end slice up rest in approx 1 inch slices.

    Toast a few tblsp pinenuts in a dry pan and add to asparagus.

    Slice 1/2 red capsicum and add it to the mix.

    In another dish add a few tblsp oil and approx the same vinegar whisk in 1 tsp sugar.

    Taste and adjust if necessary

    Pour over salad .YUM

    N.B You can also add blanched green beans to bulk the salad up if you like.

    2) 250g Mushrooms Cut in large mouthful size pieces.

    Very finely slice 1/2 onion add to mushrooms

    Add 1 tsp minced garlic

    Finely dice 1/2 bunch fresh coriander leaves and add.

    Drizzle over 2 tblsp olive oil and balsamic vinegar to taste.

    Mix thoroughly.

    have you tried the salads at Itsu? They're amazing! And unique because there's an oriental touch to it. And such non-fattening dressing!

    I usually have this with salmon sashimi (raw salmon) but I think slices of smoked salmon would go very well with this.

    Dressing - Japanese soy sauce or a chopped chilli-lime-garlic sauce to give it some zing! It's lovely, it's light, it's absolutely summer!

    my fav is fruit & cheese Salad

    ingredients -

    # 2 cups sliced strawberries

    # 2 cups cubed cantaloupe

    # 1 cup blueberries

    # 1 cup raspberries

    # 2 cups cubed Havarti cheese

    # 1/3 cup orange juice

    # 2 Tbsp. oil

    # 2 Tbsp. honey

    # 2 Tbsp. chopped basil leave

    PREPARATION:

    Combine fruit and cheese in large bowl. Mix together orange juice, oil, honey, and basil in a small jar with tight fitting lid. Shake vigorously to combine. Pour over fruit and cheese and toss. 6 servings

    Tarragon, chicken and grape salad is lovely. You mix together equal quantities of mayonnaise and single cream, add a good handful of fresh chopped tarragon and a bunch of finely chopped spring onions with some salt and freshly ground black pepper. Add a handful of halved green seedless grapes, and some sliced cooked chicken breast. Mix together, et voila! It's a good one to use up left-over chicken, and it's really tasty.

    i was a chef for many years, here is a great summer salad i used to use. baby spinach, arugula, and romaine, use feta cheese, baby shrimp, mandarin oranges with slivered almonds.. top with a lite rasberry vinagerette... you just have to take my word on this one..
