what's the difference between a convection oven and a regular oven?

    A convection oven has a fan (or fans) to circulate the hot air. Doing so evens the temperature out over the whole oven, and avoids hot spots near the heating elements and cool spots near the food you just put in. A convection oven will cook food 10-20% faster than a non-convection oven will...but it *can* dry out some items more than a normal oven.

    The most simplistic answer is air movement. The convection oven utilizes a heating element as well as a fan to insure you have a constant airflow. This insures an even and constant temperature in the oven. The standard oven uses a heating element without the benefit of a fan to "Stir-up" the air inside the oven. Convection ovens (because of air movement)) generally cook quicker and more efficiently. Each of the ovens has it's place in the kitchen.

    a convection oven has a fan to help move the hot air around...where as a conventional oven mainly has the heat source from the bottom..in theory convection is supposed to cook more evenly, quicker and at lower temps. Although I only have a large countertop convection, I turn to my tried and true conventional more often. I find the convection no different than any other toaster oven.

    A regular oven heats its contents using electricity. A convection oven uses convection currents to heat its contents. Convection currents are currents of hot air that move in a circular, or cycle, movement. Convection currents stop when the heat source is no longer heating them.

    Rather than let hot air circulate randomly, convection ovens carefully create a uniform temperature with internal fans that circulate hot air. Convection ovens are larger and more expensive than standard, or radiant, ovens, but they cook food faster, at a lower temperature, and with better results. Fans ensure that the same temperature reaches the top and bottom of foods, as well as foods at all rack levels.

    a convection oven generates heats and constantly circulates the air, so the heat is even at all times, great for baking, a regular ovens heat comes from one area and the air is not circulated. The heat is either steady from bottom or top.
