sometimes when I watch cooking shows I see chefs with white plastic knifes. does anyone know the name of them?

    They aren't plastic; they are ceramic. Ceramic Knives are typically made of either alumina or zirconia containing formulations. These ceramics can be made harder than garnet, (8.5 on the Moh scale, opposed to 6~6.5 for hardened steel) so they can be ground to a very fine edge, and will stay sharp much longer than steel.

    The downside of ceramic blades is that they are brittle, and can break or chip, if subjected to enough abuse. Thus ceramic blades are suitable to uses where sharpening is less convenient, and the knife will not receive very much punishment, i.e. kitchen knives. I wouldn't recommend making a combat bayonet out of ceramic. Since they are so hard, ceramic knives require special diamond sharpeners, and may chip if not sharpened carefully. Makers usually require the knife be shipped back to the manufacturer for resharpening.

    As a side note, many bomb squads use ceramic blades, because they are non magnetic and do not conduct electricity. Ceramic blades pose a security problem, because they do not show up on metal detectors. For this reason, most vendors make some knife parts out of metal, or add a metallic insert to the knife.

    The blades are plastic?

    I believe those are probably really high quality ceramic blades.

    If the handles are white plastic and the blades are metal, that could be any brand....sabatier?

    Those are high quality ceramic blade knives. You can find them in any knife market or by internet.

    They are the last word in knives today.

    If well treated, blade life can be more than 100 times that of conventional steel.

    i do not know the name but if you go into a good kitchen utensil shop you should get one there it is used mostly to cut LETTUCE as you can not cut lettuce with a metal knife as it causes the end of the lettuce to rust so they invented this plastic knife just for lettuce.

    They aren't plastic they are Ceramic and retain a sharper edge without resharpening longer than traditional steel. There is an image of one here:

    I bet they're ceramic knives. Plastic is only used for tasting.

    If you're referring to just the handles,the knives are made by Dexter- Russel
