Help! I have 2 pounds of ground beef and no ideas for dinner. My kids are sick of chili,?

we don't care for hamburgers and I don't have 1 1/2 to cook meatloaf. What should I cook?

    Make that meatloaf. Microwave it (about 15 minutes) and then broil it in the oven until browned (about 5 minutes).

    Sounds like you need the cookbook that I inherited from my grandmother, 365 WAYS TO COOK HAMBURGER, Easy, economical, and excitingly different recipes for 1 to 100 people, by Doyne Nickerson.

    Yes, it's a crazy book. (And I'm a vegetarian, so owning it is even sillier.) I like to read it for fun. There are some recipes that seem very bizarre. But, perhaps there is something useful?

    Wow, almost all of the recipes require at least an hour of baking, including the meatballs.

    So, I say, anything that simply requires frying, would be best. As others have suggested, that means tacos or sloppy joes, or taco salad. You could also create your own recipe, by frying the meat with your favourite seasonings, and then add it to your favourite salad fixings. Or make grilled cheese and ground beef sandwiches?

    For next time, when you can cook in advance, I'd suggest trying a meat pie recipe. There are lots of those. Tourtiere is a popular one in Canada.

    Cabbage Rolls are another tasty way of using ground beef, but again, they're a bit time consuming. But can be made in advance!

    Here is one I know you will all enjoy. If you decide to do this, don't get the regular biscuits get the flaky ones. Beef and Cheese Bake 1 ½ pounds ground beef ½ cup chopped onion 1 8-ounce package cream cheese, softened ¼ cup milk 1 10 1/2 –ounce can condensed cream of mushroom soup 1/3 cup ripe olives, sliced ¼ cup catsup 1 tsp salt 1 package refrigerated biscuits (10 biscuits) Brown ground beef and onion in skillet. Meanwhile, blend cream cheese and milk together. Stir in soup, olives, catsup, and salt. Combine with meat and onion in 2-quart casserole. Bake at 375 for 30 minutes. Arrange biscuits on top and bake 15 minutes longer, or till biscuits are browned. Serves 6

    Do you have any corn or potatoes? My kids love this one: Make mashed potatoes, warm up the corn, brown the ground beef up like you would if you were making sloppy joes or chili, then, put the mashed potatoes down on the plate first, then scoop some ground beef on top, then scoop some corn on top of that! It is so good all mixed together! Also, take some bread and spread some butter on it, and you have a scoop to scoop up the bottom of the plate!

    Beefy mac is good too. Make some noodle pasta, brown the ground beef and add some diced tomatoes or tomato sauce. Then top with cheese and you can add mushrooms or onions or whatever you kids like!

    How about making some mac and cheese and then adding the browned ground beef right in there too!

    How about making some mini meatballs and then mixing them with BBQ sauce and some grape jelly for a sweet sauce?! Kids love little meatballs! You could make something simple for a side dish, like rice or whatever veggie they like!

    Cook a package of macaroni, and while it's cooking, brown a pound or so of the hamburger. Drain the macaroni and the hamburger, mix them together, and add the following:

    1 large can diced tomatoes, undrained

    1 small can tomato paste

    Diced onion and celery, lightly sauteed

    Season with garlic and onion powder, a dash of Worchestershire sauce, and a tablespoon of sugar. Top with grated cheese and bake at 350 until bubbly -- usually 25 to 30 minutes.

    Serve with a tossed salad or green beans and some garlic bread.

    Well, if you have some hamburger, macaroni, tomato soup and bar-b-q sauce you could make chop suey.

    If you have some hamburger, instant rice, canned corn, slivered carrots and celery, canned green beans and a teryaki sauce or a dry garlic spare rib sauce, you could make a stir fry. Just cook your beef and your rice and then mix them together and add the extras. I do this quite often as it is good and filling. Also don't forget to add soya sauce.

    Also, another thing we like to eat here is hamburger with rice and diced canned tomatoes. Cook your beef and your rice and then layer them in a caserole dish so it would go Rice, Beef, Tomatoes, Rice, Beef, Tomatoes and you can top it with crushed salted crackers before baking. Bake til heated through and enjoy. It's good with Soya Sauce!

    buy some tortillas, a can of enchilada sauce, can of mushroom soup, and some shredded cheddar cheese.

    Brown the beef, mix with soup and sauce, leaving a small amount of sauce that you can coat the bottom of a large casserole dish.

    In the casserole dish, spread a thin layer of sauce on the bottom, cover with one layer of tortillas. Spread one half of meat mixture, then layer with another layer of tortillas, the other half of the meat mixture, and one final layer of tortillas. Then top with shredded cheese. Bake at 350 degrees until top layer is crunchy and bubbly. This is soooooo goood. If you want a little more flavor you might season the beef with a taco seasoning mix...this is how my mom used to do it, but it was never part of the original recipe

    INGREDIENTS

    1 pound ground beef

    1 onion, chopped

    1 stalk celery, chopped

    8 ounces egg noodles

    1 (15 ounce) can chili

    1 (14.5 ounce) can peeled and diced tomatoes

    1 (15 ounce) can whole kernel corn, drained

    1/4 cup salsa

    1 (1 ounce) package taco seasoning mix

    DIRECTIONS

    Preheat oven to 250 degrees F (120 degrees C).

    In a large skillet over medium heat, combine the ground beef, onion and celery and saute for 10 minutes, or until the meat is browned and the onion is tender. Drain the fat and set aside.

    In a separate saucepan, cook noodles according to package directions. When cooked, drain the water and stir in the meat mixture, chili, tomatoes, corn, taco sauce and taco seasoning mix. Mix well and place entire mixture into a 10x15 baking dish.

    Bake at 250 degrees F (120 degrees C) for 20 minutes, or until thoroughly heated.

    I buy ready made pizza bases and make barbeque pizzas with ground beef. The kids love it. I spread the bases with either tomato ketchup or bbq sauce (depending on what your kids like), I quickly fry the ground beef and crumble it over the pizza with slices of pepperoni and cabanossi, cheese and whatever else the kids like (olives, mushrooms, pineapple). 10 minutes in the oven. Serve with some oven baked garlic bread which is ready the same time as the pizza.

    Brown hamburger with chopped up onions,drain juice Boil some elbow macaroni or similar noodles.You can add chopped olives,some chopped garlic too. Add 2 cans of tomato sauce and 1 can of diced tomato and put it in cassarole pan / glass dish sprinkle generously with cheese on top and put in the oven at 350 deg until cheese melts as it is already pretty much cooked when it goes in the oven.You can add to this recipe with whatever you want Chopped mushrooms,green peppers etc,what ever you like. Whole thing can be ready in30-40 min. and it is good.Even better the next day
