    Dulce de Leche

    1 can sweetened condensed milk

    Remove the label from the can of condensed milk. Poke two vent holes in the top, by using a can opener.. Put the can into a pot (with the holes up), and fill up the pot with water until it is a quarter inch or so below the top of the can. Put the pot on a stove and turn up the heat. Let the pot and can simmer gently for about one and a half to two hours for runny dulce de leche, or up to four hours for solid dulce de leche. Add more water, as necessary, when the level boils down too much.

    When it's done, let it cool for a while, and then carefully open up the can completely and eat directly (for the solid variety) or use as a dessert spread (for the liquid variety).

    The resulting product should be colored tan or brown.

    1/2 cup butter

    1 1/2 cups graham cracker crumbs

    14 ounces sweetened condensed milk

    6 ounces semisweet chocolate chips

    3 1/2 ounces coconut flakes

    1 cup chopped nuts

    Preheat oven to 350 F. (325 F. for glass dish.) In 13x9-inch baking pan, melt butter in oven. Sprinkle crumbs over butter; pour condensed milk evenly over crumbs. Top evenly with remaining ingredients; press down firmly. Bake 25 to 30 minutes or until lightly browned. Cool thoroughly before cutting. Store loosely covered at room temperature.

    Makes 24 bars.

    Seven layer bars. You start with graham cracker crust, put about a cup and half of each chocolate chips, butterscotch chips, walnuts, white chips, sprinkle with coconut and pour a can of sweetened condensed milk over top. Bake about 20 minutes at 350. Mmmm, delicious!

    Chocolate Mousse Cake

    2 (9”) baked and cooled chocolate cake layers

    1 (14 oz. can) sweetened condensed milk

    2 (1 oz. ) squares unsweetened chocolate, melted

    ½ cup cold water

    1 (4 serving size) box instant chocolate pudding mix

    1 cup whipping cream, stiffly whipped

    Prepare and bake two 9” chocolate cake layers according to package directions on cake mix box.

    In a large bowl, beat sweetened condensed milk and melted chocolate until well blended. Gradually beat in water and pudding mix until smooth. Fold in whipped cream. Chill at least 1 hour.

    Assemble cake by spreading 1/3 mousse on top of one layer of cake. Top with second layer, and ice top and sides of cake with remaining mousse. Chill under serving time.

    Sweet Potato Pie.

    Last time I bought it, though, it was so I could make a Tres Leche. mmmmmm!

    BUT, my dream is to make a cheesecake, I am just afraid that I will be tempted to make and eat them all the time.

    I like to put a dollop in my coffee. It's the best, but I only do it a couple times a year.

    Chocolate Truffles

    "Truffles make a great homemade gift at the holidays. Say thank you to a friend or co-worker with a nice box of truffles. Arrange several truffles in a pretty silver box or other tin; decorate inside of box with colorful wax paper. Wrap with bow. Re-usable tins are a nice keepsake, too."

    Original recipe yield: 6 dozen.


    3 cups semi-sweet chocolate chips

    1 (14 ounce) can Sweetened Condensed Milk

    1 tablespoon vanilla extract

    Coatings (optional):

    Finely chopped toasted nuts, flaked coconut, chocolate sprinkles, colored sprinkles, unsweetened cocoa powder, confectioners' sugar or colored sugars


    In heavy saucepan, over low heat, melt chocolate chips with EAGLE BRAND®. Remove from heat; stir in vanilla. Chill 2-3 hours or until firm.

    Shape into 1-inch balls; roll in any of the listed coatings.

    Chill 1 hour or until firm. Store tightly covered at room temperature.


    Microwave: In 1-quart glass measure, combine chips and EAGLE BRAND®. Microwave on full power (high) 3 minutes, stirring after 1 1/2 minutes. Stir until smooth. Proceed as directed above.

    Amaretto: Omit vanilla. Add 3 tablespoons amaretto or other almond- flavored liqueur and 1/2 teaspoon almond extract. Roll in finely chopped toasted almonds.

    Orange: Omit vanilla. Add 3 tablespoons orange-flavored liqueur. Roll in finely chopped toasted almonds mixed with finely grated orange rind.

    Rum: Omit vanilla. Add 1/4 cup dark rum. Roll in flaked coconut.

    Bourbon: Omit vanilla. Add 3 tablespoons bourbon. Roll in finely chopped toasted nuts.

    You can add dried blueberries, raisins, and cinammon.


    Place individual Chocolate Truffles into gold/silver foil candy wrappers and arrange on a tray for decadent dessert tray. Or serve with a cup of after dinner coffee as a 'mini' chocolate treat.
