What are the procesures and ingredients of making perfect Black Forest Cake?

It's just thatI have found a lot of recipe books for cakes and made some but I can't find a perfect procedure for the crust to soften...

    I love baking, it’s my passion. From last 20 years collecting recipes. I check websites and read books to try new recipes, but tell you the truth it’s hard to find a good recipe, that really 100% correct.Here is my recipe and correct method (trick to make A one sponge)


    1. Plain Flour: 4 oz (All purpose or bleached)

    2. Baking Powder ¼ tea spoon

    3. Salt ¼ tea spoon or 2 pinches

    4. Eggs 6 large ones (separate yolks and whites)

    5. Sugar 6 oz

    6. Cocoa Powder 2 oz sifted

    Syrup to SOAK CAKE

    1. Sugar 1 ½ cup

    2. Water 1 cup

    3. Kirsch (cherry brandy) or any Brandy

    (If its Kirsch ½ cup) (Any Brandy 4 Tab spoon)

    i use only APPLE JUICE 1 cup (omit water&Kirsch&brandy)

    To Prepare SYRUP:

    Put 1+2+3 ingredients in pan and cook it on slow flame until its med thick syrup.

    For Filling the CAKE

    1. Cherries pie filling 1 can or Homemade filling (see NOTE)

    2. Whipped Double Cream 3 cups

    3. Confectioner Sugar ½ cup

    For FILLING:

    Mix C Sugar and whip cream and whip it.


    1. Whipped Cream 3 cups(whipped with1/2 cup C.Sugar)

    2. Chocolate Flakes or Curls some fresh or canned cherries to decorate


    1.Start oven heating, 425F or 200c.

    2.Grease and line(with wax paper) 9 inch round pan.

    3.Mix the 1+2+3 ingredients and sift it 3 times.

    4.With hand mixer beat Egg whites in chilled bowl until it

    holds peeks and look shiny stiff and frothy. put the

    bowl in fridge.

    5.In other Big Bowl beat Egg yolks 2 minutes. Then add

    sugar, keep beating until it’s creamy and colour

    becomes off white and looks fluffy. this Egg yolks mixture add some Flour and fold

    it with spatula carefully, now add some Egg Whites

    and fold it, again some flour and fold, again Egg

    Whites and fold. in same manner adding and folding,

    finish all Flour and Egg Whites.

    7.Now add some COCOA in this batter and fold it

    carefully with spatula in same manners (adding

    &folding). Finish COCOA.

    Pour batter into pan carefully. Make a well in centre.

    So there will be no bump on top after baking.

    Put the pan in oven (on top middle rack) and bake it

    for 30 to 35minutes.

    DON’T open the oven for 20 minutes at least.

    To check, if it’s done? Insert a knife in centre of cake.

    If it comes out clean. its done. otherwise bake it for

    further 10 minutes.

    8.Take out cake from oven and pan, let it cool.

    9.Cut cake horizontally into 3 slices.


    1.Soak cake with SYRUP.

    2.on first layer, First put half mashed Cherries Puree.

    Then WHIP cream,then put 2nd slice and repeat

    Cherries,Whipp Cream then the TOP slice, mashed

    Cherries and top with WHIPP cream. Now put cream

    on sides of cake, and put some cream in icing gun and

    make a design on sides and on top, decorate cake

    TOP with chocolate curls and Cherries and put it in

    fridge. Try this recipe. I know for sure you will love this

    cake. and will never find any good recipe better then

    this one. Send me an email. I will wait for your



    (Take 3 cups fresh pitted cherries +1 cup granulated

    sugar+1/4 cup. put these all ingredients together in stainless steel heavy based pan and cook on medium flame for one minute then cover the pan and cook it on very slow heat for 10 to 15 minutes. keep checking it and stirring meanwhile. when cherries are soft and there is no juice in pan, remove it from flame and let it cool.

    You can use it in your cakes according your recipe or you can

    put it in special bags or cans and freeze use it, in off season later. Whenever you need it take it out from freezer and thaw it in microwave for 2 to 3 minutes, then put it in pan with mixture

    (1 Tab spoon cornstarch + ¼ cup water) and simmer it on slow flame . And use it in fillings.

    I don't remember the whole recipe, but it looks like you have the cake ingredients. Unless you were just going to use jam for the cherry filling, you will also need cherries and an alcohol--either rum or a cherry liqueur or kirschwasser. You also need some whipped cream, dream whip, or some kind of icing.

    cups flour

    1 1/2 cups sugar

    1 1/4 cups milk

    1/2 cup butter

    1 1/2 teaspoon soda

    2 eggs

    1/2 cup cocoa

    1/2 teaspoon red food coloring

    1 teaspoon vanilla


    1 can (21 oz.) cherry pie filling, chilled.


    2 T powdered sugar

    1 c heavy cream, whipped

    12 maraschino cherries


    Cream butter and sugar together. Add eggs, flour, milk, baking soda, cocoa, red food coloring, and vanilla. Blend on low, scraping constantly. Beat 3 minutes on high speed. Pour into two 9 inch round cake pans that have been greased and floured. Bake at 350° for 30-35 minutes. Cool thoroughly.

    Whip heavy cream with confectioners' sugar.

    Slice each cake round horizontally to make four layers. Place one layer on flat plate.

    Fill pastry bag with whipped cream and pipe a generous ring around edge of cake layer. Fill exposed ring of cake with cherry pie filling. Place third layer on top, and frost entire cake with whipped cream. Crumble the fourth layer into fine crumbs and sprinkle on sides of cake.

    Using whipped cream, pipe 12 rosettes on top of cake and top each with a maraschino cherry.

    Garnish the center top of cake with the rest of the chocolate crumbs.

    Lo |& presto !!!! u will be flooded with tons of receipes.

    Choose the one u think is best and go ahead ......

    Do think of me whie feasting on the soft crust. Gd luck.
