Plain yogurt with orange marmalade and glazed walnuts. (To glaze walnuts -- mix 1/4 cup of butter, 1/4 cup brown sugar and 1 cup walnuts in a fry pan. Turn on the heat on med. high, and shake but don't stir until nice and bubbly. Turn out onto buttered foil and let cool). Serve with toast and a really nice tea, like Jasmine or Celestial Seasonings' Mandarin Orange Tea.

Most people don't like to make a production out of breakfast. I think a spinach and cheese omelette with a little whole wheat toast and maybe half an orange is a great breakfast!

But, if you do want to get fancy, cinnamon rolls are nice, too. Take your favorite bread dough (frozen is OK, or make it up in the breadmaker), spread it into a rectangle, and add a layer of sugar, butter and cinnamon (try 1/4 cup sugar and 1/4 cup butter with 1 tsp of cinnamon for starters -- make up more if you need it). Roll it up, and cut it with a knife or dental floss. Put it in a square baking pan (like you use for brownies) and keep in the fridge until morning. Pull it out an hour before you bake it to let it rise. Then bake at 175 C (350 F) for 20 to 30 minutes or until the bread is baked through (see package or recipe for "buns" and follow those directions).

    Have a good breakfast!

This recipe comes from “Breakfast, Brunch & More: Serious Comfort Food From New Jersey’s best Bed & Breakfasts” by Angela Williams and Lynne Kaplan. Check out Chef Kaplan’s B&B at

    1 cup chopped onion

    1 cup sliced bell pepper

    8 (8-inch) flour tortillas

    16 pre-cooked asparagus spears

    2 ½ cups shredded mozzarella

    1 cup sliced black olives

    8 eggs, beaten

    3 cups milk

    2 tablespoons flour

    Half teaspoon garlic powder

    Few drops hot pepper sauce

Preheat the oven to 350 degrees. Coat a 13 x 9-inch baking pan with nonstick cooking spray. In a small microwave-proof bowl microwave the onions and peppers on high for three minutes or until slightly softened. In the center of one tortilla place two asparagus spears, about a ¼ cup of the onion-pepper mixture, ¼ cup of mozzarella, and some of the olives. Roll up the tortilla to form a burrito and place it seem side down in the baking dish. Repeat with the remaining tortillas.

In a large bowl, mix the eggs, milk, flour, garlic powder and hot pepper sauce. Pour the mixture over the burritos. Sprinkle the remaining cheese on top. Bake for 45 to 50 minutes or until set. Remove from the oven, let stand for ten minutes and serve.

To a glass baking dish (9 X 12 or so) add the following:

    1)Six stirred eggs

    2) 1 lb. cooked fresh sausage

    3) 1 - 8 0z. package shredded cheddar cheese

    4) 1 grated onion

5)1 cut up small green bell pepper

Bake at 350 degrees for 45 minutes. If a toothpick inserted into the middle of the casserole comes out clean, it is done. ENJOY!
