There are no eggs in the plant itself..
Eggplant gets its name because it grows from eggs that are planted in the ground.
Specifically eggs from the Tibetan Mountain Rooster...
this is why it is purple.

The name "Eggplant" comes from the fact that the fruits of some 18th-century European cultivators were yellow or white and resembled goose or hen's eggs.
A raw eggplant has no eggs in it.
A cooked eggplant meal you get at a restaurant might have been cooked with eggs. How many eggs depends on what you ordered.

If you are frying the eggplant and putting a batter on it. It might have been dipped in eggs before the batter. and that amount would depend on the size of the eggplant. ( Eggplants is a Plants)

There aren't any eggs in eggplants but they are including in many eggplant recipes. It is, however, easy to find egg substitutes.

No. There are no eggs in eggplant unless you make a casserole and use eggs as a binding agent.
You will also find one "egg" in "eggplant" in any dictionary.

Of course not.
The veggies that we know today as eggplants have been bred from a small plant was roughly egg-shaped, hence the name. If I remember correctly, they have their origin southern/southeastern Asia. It's still grown today, but it's not commonly found in North American markets.
