I have a great peppermint log recipe that requires coconut to thicken the texture, only problem is I really hate coconut. The only substitute I can find is crushed nuts of some kind. Well I dont like any nuts either...Im hoping someone has another idea? Recipe has choc ripple biscuits, melted peppermint chocolate, butter and condensed milk.

Try using Shredded Wheat! Lightly crush the 'biscuits' to free the strands and then proceed as if the strands are coconut. I've also done this kind of thing using crushed Rice Chex for folks that don't tolerate gluten.Source(s): Experience
