This uses Bisquick instead of flour and is very good. You can use any quick biscuit mix instead of Bisquick.

    Ingredients:

    1 pound Jimmy Dean sausage

    8 ounces Cheddar cheese, grated

    3 cups Bisquick

    Directions:

Mix with hands until smooth. Form into small balls, put on cookie sheet and bake 25 minutes at 325 degrees.

    SAUSAGE - APPLE BALLS

    1 lb. pork sausage

    3 c. biscuit mix

    1 c. raisins, chopped

    1 c. grated unpeeled apple

    1/2 c. chopped walnuts

    1/2 tsp. apple pie spice

Combine all ingredients, mixing well. Shape into 1 inch balls. Place on ungreased baking sheets; bake at 350 degrees for 20 minutes or until lightly browned. Yield: about 4 1/2 dozen.

    HOT SAUSAGE BALLS (EASY)

    2 lb. hot sausage, uncooked

    20 oz. box Bisquick

16 oz. jar Cheez Whiz, at room temperature (or may be melted in microwave)

4 to 5 dashes Tabasco sauce

Mix all ingredients in a large bowl. Mix with hands as you do with meatloaf until well blended. Shape into balls the size of a walnut. Place on cookie sheet and bake at 350 degrees for 25 to 30 minutes.

Serve hot with toothpicks. Yields: 200 balls.

NOTE: May be made ahead and frozen, then reheated in microwave. I sometimes use a hot mustard as dipping sauce.

    ARMANDO'S SAUSAGE BALLS
