Why does it take so long for food to digest?

I've always pondered this. This has bothered me a lot, so I ask you this; why so long?

Enzymes in the stomach and intestines take some time to break down the food so that it can get absorbed through the intestine.

Actually the main thing that takes the longest to digest in a human stomach is beef. If it is well done, 6-8 oz. portion, then it can take up to 2 days to be digested. Raw veggies, can take an extremely long time too, simply because the body is breaking them down, it must cut through the membranes, then break down the food into digestible sizes and etc.
