Here's what I'm serving: homemade "turkey" roast made from Tofu. Several recipes are available on the web (or you can buy tofurkery or unturkey (made from gluten), both of which are good). Glazed brussel sprouts, roasted potatoes, sweet potatoes, squash, stuffing, mushroom gravey and maybe another dish if I have the energy.

I disagree with the answer that you should cook turkey for your non-vegetarian friends. Just tell them before hand that it's a vegetarian thanksgiving, and if they can't live without turkey, let them get it elsewhere.

    Enjoy!

Sweet potato casserole. Green bean casserole. Cranberries, either canned or freshly made. Rolls. Dressing. Gravy. Apple or pumpkin pie. For vegetarians you will want to include something with more protein like beans, cheeses, tofu, tempeh, or seitan. In health food stores you kind find tofurkey. It is quite good. Quorn makes vegetarian "chicken" that can fool most carnivores. You can make your gravy from vegetable boullion instead of turkey stock. Larger Asian markets will have vegetarian ham, duck and other forms of protein that is similar to meat. These are made of wheat gluten and soy. They are amazingly good.

Baked stuffed Squash is a great main meal. Just be sure to use vegetable broth instead of chicken broth in everything you make.

Green beans with almonds is nice, roasted potatoes and carrots,

You can serve corn on the cob, green beans, zuchini, greens, peas, stuffing w/gravy, you can also serve a veggie tray with dip and some good rolls or muffins.

    Rolls

    Green bean casserole

Mashed potatoes and gravy (you could make gravy from vegetable broth and corn starch)

Dressing (make sure it doesn't have animal broth in it)

    Deviled eggs

Not to rain on your parade, but if you are having people over who are not vegetarian, I still would have a turkey rather than try to stuff your food preferences down their throat. That is, if you ever intend to have them over for a meal again.

Most people respect someone's right to eat what they wish, but they can get somewhat huffy when you try to make the choice for them.

It's up to you, but that's my advice.

Yam, bread stuffing, stuffed mushrooms, fish (if its eaten - Salmon is awsome for thanksgiving), vegi-meddley, mix some fruit like grapes and apples into vegi dishes to add sweetness and texture.

Thats all, if you eat fish.......SALMON!!!!
