The best spices for good homemade vegetable soup?

    I use fresh, dried or both. No measured amounts; just a little of this and that, then add more as ya go if need be.

    Basil

    Marjoram

    Bay leave

    Fresh Parsley

    5 peppercorns

    ground pepper

    salt

    Pinches of Rosemary,Oregano, Tarragon, Thyme are too over powering so if you use them just add the tiniest pinch.

    Don't use Sage, Cumin.

    My 'secret ingredient' for homemade soups is (shhh ... don't tell my hubby or kids!) V-8 juice. You say you don't like tomatoes (neither do my kids), but I bet you'd love the flavor the vegetable juice gives. Other things you could add ... soy sauce or teriyaki sauce, hot sauce (definitely add some hot sauce!), bay leaf, a little red wine ... just experiment with it. Sometimes what's really 'missing' is some acidity ... add a little vinegar or lemon juice. That's the beauty of homemade soup! My rule of thumb is to try the recipe as-is the first time, then 'tweak' it to my own taste. I never measure anything and never write anything down, though ... so it's never the same thing twice!

    Homemade Vegetable Soup

    Ingredients (use vegan versions):

    4 medium potatoes peeled and diced

    4 carrots diced or small round slices

    1 medium onion chopped

    1 can of whole kernel corn (drained) approx. 15 oz.

    1 can green beans (drained) approx. 15 oz.

    1 can lima beans (drained) approx. 15 oz.

    1 can peas (drained) approx. 15 oz.

    1 can of whole tomatoes approx. 28 oz. (put the whole tomatoes in the blender and blend until it is just juice)

    water (about the can of whole tomatoes worth or you can add a separate can of whole tomatoes that hasn't been put in the blender)

    salt and pepper to taste

    Directions:

    The amounts are approximate and should be varied according to your taste and the size of your pressure cooker. My pressure cooker is about a 4-5qt size.

    Put all this into the pressure cooker and cook on hi temperature until the cooker starts to jingle then lower the heat to medium-hi and let jingle for another 15 minutes. Remove from heat and let it cool down on its own or run cold water over top of cooker until cooled down enough to open.

    Leftovers for days.

    Just use 1 tsp of VEGETA spice mixture.U can find it at local markets ,specially at polish isle.IT gives a very good taste to every soup.

    • I love Vegeta! Can't say enough good things about it! A friend from Poland brought it to the States w/her & brewed the best vegetable soup i've ever eaten. Had to get it from international vendors, but am now seeing it in some european boutique markets.

    beaf and veggie soup would be great with thyme, bay leaf, worcesterschire sauce, sage, red wine, carrots and celery. for added zip, put in some roasted garlic too.

    Both are good for you, each fruit/vegetable has different vitamins. Thus as more variety, as better. Vegetables have generally less sugar than fruits.
