Amount Measure Ingredient -- Preparation Method

    -------- ------------ ------------------------------...

    2 tbsps yeast

    1/3 c water -- warmed

    1 1/2 c skim milk -- at room temperature

    1/3 c oil -- at room temperature

    1/4 c granulated sugar

    2 tsps salt

    2 tsps nutmeg

    2 egg whites -- whipped

    4 1/2 c unbleached flour

    1/2 c egg white

    1 c sugar with 1 teaspoon cinnamon

Preheat oven at 450 after first and second rise. To proof yeast, mix 1/4 cup

warm (115) water with 1/2 teaspoon honey; stir and set aside until foamy. In

mixing bowl, combine proofed yeast, milk, oil, 1/4 cup sugar, nutmeg, egg

whites, and 2 cups flour. Beat briskly until well blended. Add remaining 2 1/2

cups flour and beat until smooth. Cover the bowl and let double in size, about

1 hour. Dust a board generously with flour and turn the dough mass onto it.

This dough is soft and needs enough flour on the board to prevent sticking, but

is easy to handle. Pat the dough into a round about 1/2" thick. Use a

3" doughnut cutter and cut out the doughnuts, placing them (and the

doughnut holes) on prepared baking pans, 1" apart. These don't spread

much; they rise. Let the doughnuts rest and rise 20 minutes, uncovered. Bake

about 10 minutes, or a little longer, until they have a touch of golden brown.

Remove from the oven. On a sheet of wax paper spread cinnamon sugar. !

    Brush

each doughnut and doughnut hole with egg white and roll in the cinnamon sugar.

    Ingredients:

    2 packages Dry yeast

    1/3 cup Warm water

    1 1/2 cup Milk

    1/3 cup Vegetable shortening

    1/4 cup Sugar

    2 teaspoons Salt

    2 teaspoons Nutmeg

    2 Eggs, lightly beaten

    4 1/2 cups Flour

    1/2 cup Melted butter

    1 cup Sugar

    mixed with

    1 teaspoon cinamon

    Directions:

Sprinkle the yeast over the warm water in a small bowl and let it dissolve for 5 minutes. Put the milk and shortening in a saucepan and heat until the shortening is melted. Cool to lukewarm.

Pour the yeast mixture into a large mixing bowl and add the milk mix. Stif in the 1/4 cup sugar, salt, nutmeg, eggs and 2 cups flour. Beat briskly until well blended. Add the remaining 2 1/2 cups flour and beat until smooth. Cover the bowl and let double in bulk, about 1 hour.

Dust a board generously with flour and turn the dough mass onto it. This dough is soft and needs enough flour on the board to prevent sticking, but is easy to handle. Pat the dough into a round about 1/2 inch thick. Use a 3 inch doughnut cutter and cut out the doughnuts, placing them (and the doughnut holes) on greased baking sheets, 1 inch apart. These don't spread much; they rise. Preheat oven to 450F. Let the doughnuts rest and rise for 20 minutes uncovered. Bake about 10 minutes or a little longer, until they have a touch of golden brown. Remove from the oven. Have ready the melted butter and a brush. On a sheet of wax paper, spread the cinnamon sugar. Brush each doughnut and doughnut hole with butter and roll in the cinnamon sugar. Go to grocery store, buy doughnuts - this is how you do not make them. Go to bakery - buy doughnuts - this also is not how you make them. I have never had a purchased doughnut that even tastes like one should. What they sell is not what you would make at home. Get a Betty Crocker Cookbook and make them. You will learn that anything you buy is not even similar.

The cheapiest and easiest recipes for doughnuts that I know you need biscuits in a can oil for deep fat frying and cinnamon and sugar. Open the bisciuts and seperate them, roll each into a ball, put them into hot oil and fry them, only about a minute or so, they will turn light brown, remove then roll them in a cinnimon and sugar mixture. Enjoy!!
