"and the rest is history" usually is used when something is well-known and the remainder of the story is understood by everyone. if you're telling a story about how a couple got together, and now they've been together for a long time, you could say "and the rest is history" once you get to the part where they start dating to show that you don't need to finish the story, the rest is assumed common knowledge to the parties involved.

We tend to repeat history. So once the jist of the story is told,, you should have recognized it from your history and therefore it is not needed to go on telling the end of the story.
