Why is most packaging for vegetarian food green?

Considering very few vegetables are actually green. Are the manufacturer implying that we just eat salads? Or grass?

Boca, Quorn, Lightlife are big vegetarian frozen food brands and none of the packaging is green.

Because green is the color of health and vitality (as is yellow) and it just implies "healthy" in most of our eyes :)
