﹝學術﹞各位大大,問一下什麼是CMC?

    皂素溶液的臨界微胞濃度(Critical Micelle Concentration, CMC)皂素為食品級的天然界面活性劑,因此廣泛的應用在食品工業中作為乳化劑或起泡劑,也應用在製藥、化妝品和清潔劑方面。皂素的微胞特性及其對膽固醇可溶化的影響。在影響皂素微胞特性方面,隨著溫度(25-52℃)及pH(3.2-8.8)的增加,皂素溶液的臨界微胞濃度(Critical Micelle Concentration, CMC)會上升,但隨著氯化鈉濃度(0 -1M)的增加,cmc值則會降低。在影響膽固醇可溶化方面,皂素可與膽固醇形成混合微胞,並使cmc值與微胞大小高於只含皂素的微胞溶液,且皂素濃度20 g/l可增加膽固醇可溶化103倍。而溫度(25-42℃)及氯化鈉濃度(0 -1M)的增加,會促使皂素溶液中膽固醇可溶化的增加;至於pH(3.2-8.6)的影響方面,則在pH 4.6有最佳的膽固醇溶化效果。因此,我們可利用皂素的微胞特性,於溶解或萃取疏水性物質在製藥和食品工業上的應用,或開發成為健康食品。參考文獻 Brackman, J.     當界面活性劑在溶液中達到某一個濃度以上時,即形成微胞構造的集中體,大量的分散在水中(或油中),這稱為臨界微胞濃度(CMC值)
