1) African American (black), Arab, Hispanic, and in the last sence, Chinese
3) This film actually contradicts conventional perception of the so-called "American values": equal, fair and compassionate towards minorities. In a society consists of people of various ethnical backgrounds and inter-racial harmony is critically needed, characters in this films do just the oppisite. They take advantages from the weak, confront others with different race/religion/culture, resort to either violence or silent obdience to deal with their problems.
I consider that this angle and the explanation/solution the writer/director provided make this film special and interesting. Instead of simply destorying the American myth, the writer/director made it clear that all evil are superfacial and the virtue and goodness everyone possesses deep inside are the answers to the "crashes" featured in this film. Therefore, when things went unexpectedly wrong (a car accident, for example), people would give up thir bias and prejudice, though temporarily, to help others. That's the real beauty of humanity.
I would like to try to answer the second question, but it may take me quite a while to organise what I have in mind and type. Please let me skip this one (at least for now).

IMDB identified Persians and Hispanics, among others, in this movie. Previously I considered it accepable in general knowledge to put Persians in the Arab block ( common perception has that all peoples in the Arab World are labelled Arab, just as all Chinese are categorized as 漢族)

Hispanic American is not necessarily Latin American. I just used the "official" IMDB term.

Honestly, I can't be 100% sure about those guys in the last minor car crash scene. There were people appeared to me have Chinese origin and, if my memory serves me right, there was some Cantonese uttered. However, I would be more than happy to learn what proves them as Koreans or Vietnamese.

they are not Arabs, they are Persians... commonly mistaken as Arabs
and they arent Chinese either, they are Vietnamese. You can categorized this culture group as "Asians", since we are all the same to them
I hate this term, but it is what it is
