The gastric juice is secreted by the peptic cells, parietel cells, the mucous secreting cells of the stomach. The pH of gastric juice is highly acidic ranging from 1.5 to say 6 in healthy persons, usually. It is strongly acidic as it contains hydrochloric acid.

After taking a meal the gastric juice secretion increases.. This will stay for a few hours and then disappears. About 99.5% of gastric juice is water and the rest is made of oraganic and inorganic solids.

I suppose you mean Gastric acid (the acidity of your stomach) right? If that is the case, the stomach's main acidity is due to HCL and the normal pH level is about 2.0. Unless you drink something more acidic that HCL (something like battery acid), it won't lower by much. As far as the highest pH level of gastric acid (which would be less acidic) it would depend upon what you have eaten. If you have taken several Tums or something it could (in theory) be close to 6.5-7.0 but won't usually get quite that high.

Remember, the lower pH levels means that the solution is more acidic, higher means more basic. The number represents an negative exponent (pH 2.0 = 10^(-2)) so every Integer jump means there are 10 times as much hydrogen ions (which come from acids) in the solution.
