It's an old custom. Italy plays in blue rather than the colors of the national flag because blue was the official color of the Royal House of Savoy. And the Azzurri tribute to the Italian monarchy survives to this day.

Sky Blue became the colour of the Royal homestead of the dominion of Italy. Italian team used to positioned on white shirts. So if truth be told the blue is a commemoration of Italy's previous noble history. Blue is likewise integrated in Italia's nationwide football team emblem.
