    仙人掌桿菌 (Bacillus cereus),又名蠟狀芽胞桿菌,廣泛的分布於土壤、塵埃等自然界中。於1960年首次有本菌引起的食品中毒事件發生。特性: 1.革蘭氏陽性﹝G(+)﹞桿菌。 2.菌體周圍具鞭毛,可運動。 3.最適合生長的pH值為6~7。 4.兼性厭氧菌:需氣情形下 , 生長較佳。 5.可形成卵圓形芽胞,具有耐熱性。  (於100℃下經1~7. 5分鐘僅可殺滅90%) 6.菌體不耐熱 , 加熱至80℃經20分鐘即會死亡。 7.可在10~50℃中繁殖,最適宜的生長溫度長溫度為30℃。原因食品:


    Bacillus cereus is an endemic, soil-dwelling, Gram-positive, beta hemolytic bacteria that causes foodborne illness.[1] B. cereus bacteria are facultative aerobes, and like other members of the genus Bacillus can produce protective endospores.[edit]PathogenesisB. cerus is responsible for a minority of foodborne illnesses (2–5%).[2] Generally speaking, Bacillus foodborne illnesses occur due to survival of the bacterial spores when food is improperly cooked.[3] This problem is compounded when food is then improperly refrigerated, allowing the spores to germinate.[4] Bacterial growth results in production of an enterotoxin; the timing of the toxin production may be responsible for the fact that B. cereus can cause two types of food poisoning: a diarrheal type and an emetic type.[5]
