材料:

在來米 600g

水 1200g+150g

蘿蔔絲 1500g

鹽 2小匙

白胡椒 1小匙

油蔥 蝦米各二大把

做法:

1. 在來米浸泡3小時以上(冬天泡隔夜), 瀝水後另加1200g的水用果汁機打成米漿, 並且用瀘網過瀘打成細致的米漿(打到沒有米粒的感覺為止)

2. 少許油炒香油蔥及蝦米

3. 蘿蔔絲+150g冷水+鹽+白胡椒入鍋中小火煮爛約20min(煮20分, 可以吃到蘿蔔絲; 也可以煮久一些, 蘿蔔絲就會化掉). 時間剩5分鐘時加入(2)油蔥及蝦米

4. 打好的米漿倒入滾沸的蘿蔔湯鍋中,熄火〈拌時看情形開小火〉持續攪拌使米漿→米糊→米糰,飯瓢沾油抹平糕面, 再蒸熟即可。

說明:

1. 攪拌米漿成糰時, 一定要拌勻成一糰, 感覺有點吃力時才OK. 不然蒸好會出水

2. 蒸熟測試: 用叉子刺入蘿蔔糕中心, 沒有沾上米糊即可.

3. 可以用大同電鍋外鍋加2杯水左右蒸熟. 跳起來再測試, 如果還沒熟, 外鍋加一杯水, 再蒸一次
