    酵母菌在糖解作用中,會先將麵團中的葡萄糖轉換成丙酮酸.

    不過在無氧的情況下時,同時因為酵母菌有丙酮酸脫梭酶(Pyruvate Decarboxylase)

    所以能將丙酮酸中的梭酸基(COO)脫去,而脫去的部份就以二氧化碳的形式跑出.

    當然丙酮酸脫梭後形成的乙醛再與NADH反應就會形成乙醇,即為酒精.

    不過你絕對不會因為吃麵包而酒醉,因為在烘焙時,環境的溫度使得酒精蒸發掉了,所以麵包中不會有太多的酒精.
