    義大利肉醬Bolognaise Sauce

    準備時間:10分鐘

    製作時間:30分鐘

    製作份量:4人份

    材料:

    1.Ground beef 牛絞肉 1kg

    2.Carrot 紅蘿蔔 400公克

    3.Onion 洋蔥 一粒

    4.Garlic 大蒜 20公克

    5.Celery 芹菜 400公克

    6.Thyme dry 百里香 3公克

    7.Oregano 奧利岡 3公克

    8.Tomato can 切碎番茄罐 1can

    9.Tomato paste 番茄糊 200g

    10.Red wine 紅酒 少許

    11.SALT AND PEPPER 鹽與白胡椒少許

    作法:

    1.將材料2.3.4.5切成小塊狀。

    2.於鍋中放入少許的橄欖油於鍋中加熱,放入上述炒香至金黃色。

    3.加入牛絞肉一同攪拌均勻。

    4.放入番茄糊攪拌均勻後放入紅酒少許

    、奧利岡、百里香。

    5.待炒約3-5分鐘後,放入切碎番茄罐一同煮沸至熟。

    6.熬煮約20-30分鐘、加入鹽與白胡椒少許調味即可。

    新鮮莫扎里拉番茄沙拉Mozzarella cheese with Tomato Salad

    材料:

    1.Mozzarella cheese 新鮮莫扎里 200公克

    2.Tomato 大番茄 4至6粒

    3.Basil 九層塔少許

    4.橄欖油 A LITTLE 少許

    作法:

    1.將大番茄洗淨切成片狀(約0.5公分)、新鮮莫扎里切成與番茄同厚度備用。

    2.將切好之番茄與起士以交叉方式置放於盤上。

    3.將少許的九層塔切成絲狀,均勻地撒在沙拉上、少許橄欖油亦同。

    Chicken Italiano

    1 lb. boneless skinless chicken breasts, cut into bite-sized pieces

    1 green pepper, chopped

    1 small onion, cut into thin wedges

    1 can (14-1/2 oz.) diced tomatoes, undrained

    1 cup water

    1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner

    SPRAY large skillet with cooking spray. Add chicken; cook and stir 5 min. on medium-high heat. Add green pepper and onion; cook 5 min. or until chicken is cooked through and vegetables are tender.

    STIR in tomatoes, water and Macaroni. Bring to boil. Reduce heat to low; cover.

    SIMMER 10 min. or until macaroni is tender, stirring twice. Stir in Cheese Sauce until blended.

    Substitute 1-1/2 cups any frozen mixed vegetables for the green pepper and onion

    Chocolate Indulgence Cake

    oz. (1-1/2 pkg.) BAKER'S Dark Bittersweet Chocolate Baking Bars

    3/4 cup (1-1/2 sticks) butter

    4 eggs

    1 cup sugar

    1/2 cup flour

    PREHEAT oven to 350°F. Microwave chocolate and butter in large microwaveable bowl on MEDIUM (50%) 2 min. or until butter is melted. Stir until chocolate is completely melted; cool to room temperature. Set aside.

    BEAT eggs and sugar in large bowl with electric mixer on medium speed until thick and lemon colored. Blend in chocolate mixture. Add flour; mix well. Pour into greased and floured 9-inch round cake pan.

    BAKE 30 min. or until center is set. Cool 5 min.; remove from pan. Cool completely on wire rack. Cut into 12 wedges to serve.

    Caribbean Spice Chicken

    ====================

    Ingredients:

    •1 can (20-ozs) pineapple slices

    •1 tsp each, ground ginger, curry powder, and garlic powder

    •¼ tsp cayenne pepper

    •1 tsp cornstarch

    •4 skinless, boneless chicken breast halves

    •1 tsp vegetable oil

    •¼ cup each flaked sweetened coconut, slivered green onions

    Instructions:

    1. Drain pineapple juice into a large measuring cup. Combine spices in small bowl.

    2. Stir ¼ tsp spice mixture, along with cornstarch, into pineapple juice. Set

    aside. Sprinkle remaining spice mixture over chicken. Drizzle oil over chicken. Place on roasting pan rack.

    3. Bake in 400 degree oven 15 minutes. Arrange pineapple slices on rack. Bake 5 minutes longer.

    4. Meanwhile, stir pineapple juice mixture. Microwave, uncovered, 2 to 4 minutes until sauce boils and thickens.

    5. Arrange chicken and pineapple on 4 serving plates.

    6. Spoon pineapple sauce over top with coconut and onions. Serve with ½ cup serving of dark green vegetables.

    BBQ Cheeseburgers

    Ingredients:

    •1½ lb ground Beef

    •¼ cup finely chopped onion

    •Barbecue sauce

    •4 slices process American cheese

    •4 Burger rolls, split

    •Romaine lettuce

    •Tomato slices

    Instructions:

    1. In large bowl, combine ground Beef and onion, mixing lightly but thoroughly. Shape into four 3/4"-thick patties.

    2. Place patties on grid over medium, ash-covered coals. Grill, uncovered, 13 to 15 minutes or until centers are no longer pink, turning occasionally. Approx. 1 minute before burgers are done, brush with barbecue sauce; top with cheese.

    3. Line bottom of each roll with lettuce and tomato; top with cheeseburger. Close sandwiches.

    Lemon Pepper Chicken

    INGREDIENTS:

    2 teaspoons butter

    1 tablespoon ground black pepper, divided

    1 skinless, boneless chicken breast half

    1 tablespoon fresh lemon juice

    DIRECTIONS:

    Melt butter in a small skillet. Pepper the skillet with 1/2 tablespoon of the pepper, then lay the chicken breast onto the pepper. Squeeze fresh lemon juice onto the chicken, then season with the remaining pepper.

    Saute chicken breast for about 5 to 7 minutes, then turn to the other side, squeeze lemon juice onto the other side and saute for another 5 to 7 minutes (or until chicken is cooked through and juices run clear).

    Awesome Baked Sea Scallops

    INGREDIENTS:

    16 sea scallops, rinsed and drained

    5 tablespoons butter, melted

    5 cloves garlic, minced

    2 shallots, chopped

    3 pinches ground nutmeg

    salt and pepper to taste

    1 cup bread crumbs

    4 tablespoons olive oil

    1/4 cup chopped parsley

    lemon wedges for garnish (optional)

    DIRECTIONS:

    Preheat oven to 425 degrees F (220 degrees C).

    Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.

    In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops.

    Bake in preheated oven until crumbs are brown and scallops are done, about 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.

    叉燒醬烤紐西蘭沙朗---六人份紐西蘭沙朗牛肉切塊 (每份約 150g牛肉) 1公斤 蠔油 2大匙 叉燒醬 1罐蜂蜜 3大匙 中型洋蔥 去皮剁碎 1個 蒜頭 去皮剁碎 2顆 雞湯 900ml 磨碎胡荽 1 大匙 鹽 2小匙作法整塊牛肉表面塗上叉燒醬和蠔油,放在加蓋大碗中,靜置冰箱四小時以醃漬入味。塗抹時經常翻滾牛肉以確保醬料均勻沾滿牛肉。烤箱先預熱至190℃。自醃醬中取出牛肉,放在烤肉架上。烤肉架置於烤肉盤上,盤中半盛冷水,烤15分鐘。自烤箱中取出牛肉,並以叉燒汁刷塗整塊牛肉。將烤箱溫度調至180℃,再放入牛肉烤15分鐘。最後取出牛肉,在表面刷上一層蜂蜜。檸檬蜂蜜鮭魚排(4人份)     材料 :鮭魚600克(切成4片)、蜂蜜6大匙、醬油3大匙、檸檬1個榨汁、麻油1/2大匙、辣椒粉1/4小匙、黑胡椒粉少許 。做法: 1.混合所有調味料(鮭魚除外)做成醃汁。 2.醃30分鐘左右,勿醃製過久,入味即可,因為檸檬汁會「煮熟」魚肉,太久會老。 3.不沾鍋中放入少許油,魚排先煎一面,略呈金黃後,再換面煎。 4.或可將魚排包在錫箔紙中,放入烤箱約烤6至8分鐘。將醃料加熱,煮沸,煎或烤熟的魚排置於已熱過的碟中,淋上少許煮汁,一旁置少許煮過的蔬菜或生菜即可。
