    活鯽魚先用白醋泡醃過(軟化骨頭),再下鍋炸定形,蔥薑鋪再鍋底,炸過的魚鋪上(一層蔥薑一層魚),爆香蒜頭,豆辦醬,調味料水,米酒悶到魚骨酥爛即可,冷熱吃都可以 或加lemon 汁淹半小時用文火後開大.在印尼用快熟鍋炸大約十分
