it's actually a white meat due to it being so lean, when cooking rabbit, make absolutely sure you cook it all the way through, because rabbits usually carry a disease called Rabbit Fever(Tularaemia) that transfers over to humans threw body fluid transfer(infected blood getting into a hunter's cut is an example) or ingestion of improperly cooked meat, make sure it's white all the wat through before eating like any other white meat.
"but domestic chicken and rabbit are generally considered "white""
rabbit/hare is considered poultry by industry standards.

It is considered "red meat".
Poultry is considered "white meat".
Rabbit meat is very good, especially cottontail, and can be prepared a variety of ways. To me, it is similar in taste to pheasant.
