• When you order Chinese food, what do you order and why?

    Best answer: Depends on which Chinese restaurant I'm at. Surprise, they don't all carry the same stuff.     Best answer: Depends on which Chinese restaurant I'm at. Surprise, they don't all carry the same stuff. That's like assuming iHop and Black Angus are exactly identical because they're both "American food" restaurants.

    Anyways, most Chinese restaurants in the US don't serve real Chinese food. For instance, the Sweet & Sour Chicken you're familiar with doesn't exist in China. Neither does Egg Foo Yung, which is basicallly an omelette with chop suey in inside. (do I need to tell you that Chop Suey is also not a real Chinese dish?)

    Spring rolls and fried rice are real Chinese dishes though.

    If you want to try other examples of real Chinese food, try the potstickers (pan fried dumplings) or Chow Mein (fried noodles.)

    Or find a restaurant that serves dim sum. Dim sum is a collection of small plates of different items, some steamed, baked, or fried. Many dishes are small dumplings with various fillings, or large meat balls you can share with a friend. Then there's other stuff....such as rice porridge which comes with chopped bits of organs in it, or fried chicken feet.

    Before cooking (by frying - or deep frying?) they look something like a disc of dry pasta, but expand a lot when cooked, forming bubbles inside them.

    The dishes in the photo appear to be Mango chutney in the centre, a classic accompaniment, fairly mild and sweet.
    The right hand is probably Brinjal pickle, made with aubergine.

    The left is Lime Pickle - which is approximately the pickle equivalent of of vindaloo, heat-wise..

I would have thought you would have been more imaginative and noticed that "aloo" is Hindi for potato, but of course that doesn't work because there should not be any potatoes in it.     It was actually the Portuguese who introduced chillis to India. Before then, Indian food was only mildly spiced. The name comes from Portuguese "carne de vinha d'alhos" which means meat in garlic wine. (Try saying it without the h's - geddit?) The sailors would have preserved their meat in wine and garlic for long voyages. Then local cooks in Goa (where the Portuguese invaded) added chillis to it. Traditionally in Goa the meat would be pork.

    The result is that it is known in Britain as the hottest of the standard range of curries in Indian restaurants so I do wonder if Goan cooks invented it as revenge. In "yer bog standard" British Indian restaurant there will be a number of curries - korma, jalfrezi, madras - and vindaloo will be the one with the most chilli in it. I'm convinced all they actually do is just cook up a range of sauces and just put your specified meat in it when you order chicken madras, beef madras, lamb madras etc. I've even seen "meat curry".
