    Hi Alexis, You can cook it without a rack but I would add a little water to cover the bottom or better still cook it on a bed of vegetables a couple of carrots leek etc. this you can then use to help make gravy when the turkey is done. I cover it completely with foil so that it is not touching the meat, breast side down for half an hour then turn it breast side up until it is cooked allowing 20 minutes per pound in weight plus 20 minutes -" for the oven". for the last half an hour or so take the foil off to brown the breast and finish cooking. Let the Turkey rest when it comes out of the oven for at least half an hour. this will redistribute the juices back through the bird and stop it becoming dry. it can be covered in foil and a tea towel on top to keep it warm. If you suspect that it might contain gelatine look on the lable and if it says Agar agar you know it is safe for vegetarians or vegans as this is made from seaweed. Be especially wary of things like wild mushrooms etc. if you are not sure then leave them alone. Anything with a white milky sap is often poisonous - with the exception of Dandelions you can eat the young leaves of them raw in salads or cooked in soups or like spinach. The first we know of when something goes bad is our nose so if you have a sense of smell and it seems ok then it will mos likely be fine to eat. Keep it in the fridge (or freezer) until you want it . If you have qualified restaurant or kitchen experience you would know when a steak for example was done. If you have qualified restaurant or kitchen experience you would know when a steak for example was done. However if you were making meat in a sauce i would expect you to taste the sauce to be able to adjust the seasonings if needed. You could if you wanted to be a vegetarian chef just specialise in that type of cookery however these types of jobs would limit your experience and opportunities to become a good all round chef. A great chef always wants his customers to enjoy the food that he or she has prepared how can you really test without tasting. Many chefs will tell you that we eat with our eyes which in a sense is true though no matter how good the food looks - and it may look outstanding - but if the seasoning or flavour is wrong then that dish is ruined and so would your reputation be. You also cannot rely on a non vegetarian tasting what you have cooked as how can you tell what it tastes like from just what they say. I hope this helps, all the best. Rab

    Hi, Yes it should still be safe to eat if it is well wrapped. Having said that,meat stored in a freezer can deteriorate after a certain length of time. Depending on the star rating of the freezer it should be fine if stored in a 4 star freezer. When frozen and well wrapped you will stop bacteria, if there was little there to begin with. What may happen though id not well wrapped is that you get what is called 'freezer burn' this will turn the meat slightly off coloured - compared to what it would normally look like - and may toughen it up. When you do cook it make sure it is well cooked especially if there is any sign of 'freezer burn' I would suggest a casserole or some such type of dish would be your best bet especially if it is slightly discoloured. When defrosted I would use it slightly sooner when cooked compared to fresh meat just to be sure. I hope this helps,all the best. Rab
