In louisiana if your on probation for restitution and the victim writes a letter sayin he dont wanna persue it?

Can the judge still send u to jail for none payment.

Yes. You are not on probation for restitution, you are on probation for committing a crime. The restitution is part of your probation terms and if you don't abide by the terms of your probation, you can be incarcerated for the maximum sentence allowable for the crime your were convicted of, less any jail you have already served. It is unlikely that will happen, 30 days in jail is pretty standard for a violation of probation.
