What can I make with a 7 pound can of diced tomatoes?

Question

I have this huge can of diced tomatoes and not sure what I can make with it. I was thinking chili, but my recipe calls for tomato sauce, not diced tomatoes. Any ideas? Thanks!

you can still make chili there is almost no wrong way to make chili. i use diced tomatoes in my chili all the time because it comes out chunky and hearty ! you also don't need to use all 7lbs at once you can use what you need and freeze the rest ! you can make stewed tomatoes or add some to goulash or spaghetti , salsa, chill them and add it to salad, i have used it in Italian pasta salad ...the possibilities are endless !! you can still make chilli with the diced tomatoes and add stock or water to make the chilli more liquidy (this is what i do). or you can make a roasted tomato soup!

add olive oil, salt and pepper and throw those tomatoes is the over for an hour or longer! mix it with some carrots, onions, garlic, stock/water, cook, puree, bob's your uncle!

You can make your own tomato sauce with the diced tomatoes. You can add diced green peppers, diced celery, and diced onion. I would cook those 3 veggies until soft in a little olive oil. Add the diced tomatoes with some dried sweet basal, oregano, and pepper. Add salt if needed. If the sauce needs a little something extra, you can add a little sugar. I make this using fresh tomatoes from my garden. After this is cooled, I pour this in large freezer containers. I use it for chili, spaghetti, hot dishes and lasagna. Good luck! This sounds like a lot of work, but it is worth it.
