What's the deal with the madeleines in Marcel Proust's "Remembrance of Things Past"?

I'm too lazy to read the book, but interested in Proust's use of "involuntary memory". What exactly happens with the madeleines?

For some it is baking bread, but not many people bake bread these days. Try cut grass, warm strawberries, or bacon frying. Smell/taste memory stays deep and there is a point where you can perfectly recall a summer's day when prompted by that taste.
