Are these sentences correct?
''What is your horse called?''
''Does your job require a profound understanding of Freud?''
''I'm studying sociology, philosophy, art and music technology?''
''Do play any instruments?''
''Are you familiar with the works of Jack Kerouac?''
''Thank you for buying me a drink!''

Yes it looks fine. Apart from the third sentence which should read 'Do you play any musical instruments?' as instruments can also include surgical instruments.

''Do YOU play any instruments?''
also
''I'm studying sociology, philosophy, art and music technology?'' doesn't need a question mark. It would be fine with a period unless you are unsure of what you are studying, which is unlikely.

They're all correct except for the fourth one: Do YOU play any instruments? and the punctuation of the third one: should be a period at the end of a statement.

In the third one, it's not a question, so it needs a period instead of a question mark. Also, "...philosophy, art, and music technology.." or is "art and music technology" the name of the course or study?
In the next, it lacks a subject, and "play" is second person singular, so it should read "Do you play..."
