can somebody please give me examples of what i could talk about?

Tell us about one such relationship, with a focus on the details of your interaction, not the person.

maybe talk about an interaction with the respective person which changed your life .. maybe your outlook on life.. you can makeup story about how that person was affected by disease , poverty a dysfunctional family but still managed to stay on top and you could talk about how your daily life interaction with that kind of person brought change to your life.. awakened a new kind of side in you which u never knew existed.. and you can also include details about why that particular thing will help in college and make you a worthy student !! stay unique
