Cinnamon Chicken.....?

Anyone have a easy cinnamon chicken recipe. I have look online and notice a few variations so I was wondering what is your favorite way to cook it.

CINNAMON CHICKEN

4 chicken breasts
1/4 c. soy sauce
1/4 c. teriyaki sauce
1 tbsp. onion powder
1 tsp. garlic powder
Dash black pepper
Dash cinnamon

Brown chicken in skillet. Reduce heat and simmer. Add teriyaki and soy sauce. Let cook down slightly. Add onion, garlic and pepper. Keep chicken moist by adding water. Turn chicken over frequently. Add cinnamon and let simmer a few minutes

OR

OVEN FRIED CINNAMON CHICKEN

1 (3 lb.) chicken, cut into quarters, skinned
1/2 tsp. salt
1/2 tsp. freshly ground white pepper
1/4 c. flour
1/4 tsp. turmeric
3 egg whites
2 tsp. safflower oil
1 tsp. cinnamon
1 c. fresh bread crumbs

Preheat oven to 325 degrees. Mix salt, pepper, flour and spread on plate. In a small bowl, whisk the turmeric and cinnamon into the egg whites. Dredge the chicken pieces in the flour, then dip them in the egg whites and coat them with the bread crumbs. In a large skillet heat oil over medium heat; lay chicken in, bone side up and brown lightly on one side. Turn chicken over and put skillet in the oven for 30 minutes. Remove and turn oven up to 450 degrees, wait 5 minutes. Put back in to crisp coating for 5 minutes. Watch closely.

OR

CINNAMON CHICKEN

1 clove garlic, cut in half
4 tbsp. melted butter
1 tsp. soy sauce
1/4 c. white wine
1 tsp. sugar
Parsley
Cinnamon
2 lbs. chicken parts (remove skin)

Rub chicken well with garlic. Pour melted butter over chicken. Dust well with cinnamon. Sprinkle with soy sauce.
Bake at 350 degrees for 30 minutes. Mix wine, sugar and parsley. Pour over chicken. Bake for another 30 minutes; baste often

    Ingredients

    * 2 pounds chicken breasts (skinless and boneless)
    * 1 cup mayonnaise
    * 2 1/2 teaspoons curry powder
    * 1 stalk celery, finely chopped
    * 1 1/2 teaspoons mango chutney (or orange marmalade)
    * Sea Salt and freshly ground black pepper
    * 1 medium to large Hawaiian papaya, cut lengthwise, seeds removed
    * Mixed greens, for garnish
    * Paprika, for garnish

    Directions

    In medium saucepan, bring 3 cups of water to a boil, reduce heat and add chicken. Add fresh garlic, salt and pepper to taste. Let simmer for 10 to 12 minutes or until fork tender - be careful not to overcook. Remove chicken from saucepan and allow for chicken to rest on a wire rack.

    Once the chicken is cooled, dice into small pieces.

    In a medium bowl, combine the mayonnaise, curry powder, chopped celery and mango chutney. Add the diced chicken, season with salt and pepper, to taste, and stir until ingredients have mixed completely. Cover and refrigerate for at least 1 hour.

    Cut a medium to large sized Hawaiian papaya lengthwise and remove all seeds. Let chill.

    Prepare a plate with a layer of greens. Place the chilled half papaya in the center of the plate, surrounded by the greens. Using an ice cream scoop, place a generous scoop of chilled curried chicken salad into the center of the papaya, and sprinkle with paprika, for garnish.
