When to change oil on deep fryers?

Ok, i work as a one man kitchen operation / manager. I have 2 deep fryers that use about 7 1/2 gals. of oil each (the zero grams trans fat healthier oil). I currently change them out once a week - but in an effort to increase profit margin and cut costs, can i do this once every 2 weeks? Also , does anyone know any discussion groups or forums for small kitchen / grill people? Thanks in advance.

If you decide to do it less often, I would definitely drain and strain the oil more often then. Straining it will get rid of large debris and probably cut down on smoking issues and allows you to clean out the sludge built up in the bottom of the fryer. Also, talk to your food service supplier. There used to be something you could add to your oil to increase its fryer life but I don't remember what it is.
