Carbohydrate fermentation is simply the anaerobic oxidation of carbohydrates to acids or alcohols, with the generation of some ATP. Most organisms, including humans, can ferment carbs when oxygen is limiting.
In general, bacteria produce acids (this is where we get vingar from), yeats produce alcohols (beer and wine), and mammals produce lactic acid (muscle stiffness) from fermentation.
