What is a healthier alternative to pan or deep frying catfish?

I would like a dry rub of sorts or blackening recipe for the grill perhaps.

Old bay makes a pretty good blackened seasoning. I've tried it on grilled trout. I'm sure it would be good on catfish too. I used a small foil roasting pan and arranged the coals around the outside while leaving the center open so the fish wouldn't cook too quick. You could alos pan sear the catfish with blackened seasoning.

    you can also use seasoned breadcrumbs and bake it in the oven instead of frying. You can do the grill with spicy seasonings like jerk seasoning or chili powder and red pepper flakes. Yummy!

    if you want to blacken the fish the right way, you will need a cast iron skillet and a heat source outside. i use a camp stove, but you could use a propane burner, if you have an outdoor fryer or a grill with a side burner. you will also need 2 sticks of real butter and Paul Prudhomme's blackened redfish macic (with the spices in the grocery) DO NOT ATTEMPT TO BLACKEN INSIDE.

    Get your skillet red hot (just let it warm up over high heat while you prepare the fish or at least 10 minutes)
    Make sure your fillets are thin (you may have to slice them long ways to make them thinner)
    melt 2 sticks of butter in a shallow dish in the microwave
    dip the fillets in the butter and season with blackening seasoning
    carefully place fillets in skillet (do not crowd) and cook for one to two minutes till the fish is dark, but not burned, turn repeat.
    High heat is the key. This method was designed to cook chewy and tough redfish, if done the right way your fish will be tender and delicious.

    rub with old bay. squeeze some lemon juice then place in foil. seal tight bake or grill for 15 min

    Catfish is too tender to grill; it will fall apart. Just bake it.

    Skillet-Grilled Catfish

    INGREDIENTS:
    1/4 cup all-purpose flour
    1/4 cup cornmeal
    1 teaspoon onion powder
    1 teaspoon dried basil
    1/2 teaspoon garlic salt
    1/2 teaspoon dried thyme 1/4 teaspoon white pepper
    1/4 teaspoon cayenne pepper
    1/4 teaspoon pepper
    4 (6 ounce) fillets catfish
    1/4 cup butter

    DIRECTIONS:
    1. In a large resealable bag, combine the first nine ingredients. Add catfish, one fillet at a time, and shake to coat.
    2. Place a large cast-iron skillet on a grill rack over medium-hot heat. Melt butter in the skillet; add catfish. Grill, covered, for 6-8 minutes on each side or until fish flakes easily with a fork.


    Crispy Catfish

    INGREDIENTS:
    3/4 cup finely crushed saltines
    1 teaspoon seasoned salt
    1/2 teaspoon celery salt 1/2 teaspoon garlic salt
    4 (8 ounce) fillets catfish
    1/3 cup butter or margarine,
    melted

    DIRECTIONS:
    1. In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture.
    2. Coat grill rack with nonstick cooking spray before starting grill. Grill fillets, covered, over medium-hot heat for 10 minutes or until fish flakes easily with a fork, carefully turning once.
